4 Great Dishes That Go Well With Red Wine

Ingredients required :

  • 40oz eggplant
  • 2 tbsps. yogurt
  • A piece of lemon
  • Salt and pepper to taste
  • Coarsely chopped mint leaves

Slice your aubergines into circles and season them well with salt and pepper. Take a griddle, heat it and place the aubergine circles and roast on both sides until charred, soft and cooked. Keep them aside. Place yogurt in a bowl, add a pinch of salt, pepper and lemon juice. Drizzle on the aubergines and mint leaves and don’t forget the perfect glass of red wine .

Ingredients required :

  • ½ tsp grated ginger
  • ½ tsp cumin seeds
  • ½ tsp grated garlic
  • ¼ tsp paprika
  • ¼ tsp turmeric
  • 2 thinly sliced onions
  • 2 tbsp. tomato paste
  • 2 oz. green lentils
  • ½ tsp of spice mix of cardamom, cinnamon, nutmeg, cloves

How to prepare
In a small skillet, add oil and cumin seeds. When they begin to sputter, add onions and spices. Fry it for two minutes. Add the tomato paste and cook until it begins to separate from the oil. Add the pre-soaked lentils (soak them for 2-3 hours), add salt and cook them in a slow cooker. Sprinkle the spice mix at the end and let it simmer for another 5 minutes. Serve hot with rice or flatbread. Don’t forget to open up that Grenache red wine , which adds the perfect touch to your spiced up meal.

Ingredients required :

  • 3 tbsp. olive oil
  • ½ cup finely chopped onions
  • 5 oz. eggplant
  • 5 oz. zucchini
  • 5 oz. tomato (crushed or puree)
  • 1 pre-made pastry sheet (pre-bake it so you can use it for this recipe)

How to prepare
In a large pan, add 2 tablespoons of olive oil and add onions. Once these onions are lightly toasted, add the eggplant (all vegetables you plan to use should be cut into tiny circular discs). Once slightly toasted, add one tablespoon of olive oil. Then add zucchini and tomatoes.Fill this ratatouille into the tart base (which has been pre-baked). Heat it up slightly in the oven and serve warm with Morgan Beaujolais for an ideal pairing of this recipe with red wine.

Mushroom Crostini

Mushroom Crostini

Ingredients required :

  • 1 baguette
  • 10- 12 mushrooms (approx. half a pound)
  • 3 tbsp. of yogurt
  • A squeeze of lemon
  • ½ tsp finely chopped mint
  • Few leaves of spinach blanched and chopped
  • Cheese for garnishing

How to prepare
Take fresh mushrooms, cut them into quarters and toss them onto a griddle. Season them well and set aside. Take yogurt in a bowl and add lemon, finely chopped mint and 1 tablespoon of spinach (blanched and pureed). Now, to put it together, take the baguette slices, and add one teaspoon of the yogurt mix and spread it. Add the sautéed mushrooms, grated Brie Cheese on top and line them on your baking tray. Preheat your oven to 400-degrees F and heat the baguette slices for few minutes, just until it is warm enough for you to serve. Pair it up with some of the best Sangiovese red wine to enjoy the perfect taste.
